Strawberry Avocado Salad

I always look forward to the early Spring when the first of the berries start coming in. They won’t be local for months here in Ohio, but I still am tempted by the offerings at the market. And one of my favorite ways to have them often, without overindulging in sweets, is to pop a few on top of a salad here or there.
I find the flavors go wonderfully with avocado, chevre, and macadamias, so simple as it is, it makes a very satisfying salad plate.
The strawberry vinegar I make myself at home, but you can opt to use store bought of any berry vinegar variety.

Strawberry Avocado Salad
Ingredients:
- 2 cups mache, arugula or baby greens
- 2 cups baby spinach
- 1 avocado pitted and chopped
- 12 large strawberries
- 4 ounces soft goat cheese (chevre)
- 1/4 cup chopped toasted macadamia nuts
- 1/4 cup strawberry vinegar or other berry vinegar
- 1/4 cup olive oil
- 1 teaspoon poppy seeds
- 1-1/2 teaspoons sugar or honey
- 1/4 teaspoon (each) salt and black pepper
Method:
- Line chilled salad plates with a mixture of baby spinach and lettuces; top with chunks of avocado and sliced strawberries, then sprinkle with bits of chevre and macadamias.
- Whisk together vinegar, oil, poppy seeds, sweetener, salt and pepper and drizzle over salads.
- Serve at once.
