My recipe of the day is for  beef ribs cooked easily in the Instant Pot or electric pressure cooker, with  my newest cooking and blogging group: Multicooker Monday.

I have been meaning to do more recipes  this year using some of my various small appliances, such as the instant pot, slow cooker,  sous vide and air fryer. I think making a group was an  excellent way to stick to that protocol and not  just start the year with high hopes and simply forget about it.

And it seems to be working, as I already am starting to stack up  and backlog a number of wonderful recipes I am looking forward to sharing with you.

Instant Pot Beef Short Ribs

The Instant Pot essentially does a braise on the ribs, with the cooking liquid in this case being lager beer (such as Budweiser). I  added various ground chilies  to this as well to make a mildly spicy, but not overly hot, beefy gravy.

I often see this kind of thing served with a coffee flavored sauce, which has almost become synonymous with the short rib. But you can do  this other ways,  so don’t be fooled-  and this definitely does not  lack in flavor.

It doesn’t matter  too much whether you toast and grind your own chilies or use what they sell bottled  in jars- it is all the same. With the exception that doing it yourself makes it fresher. Just be sure to use chilies ground  within the last  few months.

The ribs are perfectly  comfy sitting  on top of polenta- or whichever base you prefer, such as mashed, rice, noodles and the like. And while the beef has that spicy southwest flavor, it is also very much comfort food and might remind you of something your grandmother made.

Equipment

  • Instant Pot or Electric Pressure Cooker

Ingredients
  

  • 4 pounds beef short ribs
  • 2 tablespoons olive oil
  • salt and black pepper (for seasoning beef)
  • 1 large onion (chopped)
  • 4-6 cloves chopped garlic
  • 16 ounces lager beer
  • 8 ounces tomato sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon Worcestershire sauce
  • 2 teaspoons beef base or bouillon
  • 2 teaspoons ground cumin
  • 1 teaspoon dried oregano
  • 1 tablespoon ground ancho chili
  • 1-1/2 teaspoons ground pasilla chili
  • 1 teaspoon ground chipotle chili
  • 1-1/2 teaspoons salt
  • 1-1/2 teaspoons black pepper
  • 3 tablespoons cornstarch

Instructions
 

  • Season beef with salt and pepper, then sear to brown in oil along with the onion, either using a skillet or the sear function of the instant pot. With the amount of beef, I find it faster in the skillet.
  • Stir remaining ingredients (except cornstarch) and pour over the ribs in the pot.
  • Seal the lid and cook on manual/high for 45 minutes.
  • Use the quick release and do not remove lid before the steam subsides.
  • Remove ribs and skim any fat from the top of the sauce.
  • Mix a cornstarch slurry of 3 tablespoons starch with 1/2 cup cold water.
  • Stir into the sauce and set the cooker to sear, stirring sauce until it thickens up.
  • Serve the ribs over corn polenta, mashed potatoes, rice, etc. Polenta is shown in photos.

  1. You had me at lager…you lost me at Budweiser!!! 😛 Still…this recipe looks and sounds amazing…and it’s a great way to use up some of my chilis that I have in my pantry!!! P.S. I needed a group like this! I had no slow cooker or crock pot recipes last year…and for the girl who celebrates Crockpot Monday…that’s just not acceptable!!!

    • Budweiser is a lager- which is just for the type. I don’t care what brand people use- something like Sam Adam’s is also good. My usual IPA’s that I like to drink would probably be much too bitter, and something like a Belgian ale a bit too sweet.
