My recipe of the day is for making hard-cooked eggs in the instant pot as well as making the classic version of deviled eggs.

The process for cooking eggs in the instant pot is quite easy. Using the rack you can stack the eggs pyramid style. I’m not sure that once you include the heat up time and the time to release the steam it’s any faster, but it does produce nicely cooked eggs and mine were easy to peel.

If you don’t have an Instant Pot, what I do is take eggs that I bought 5-7 days earlier, place them in a cold water start with enough water to cover. Bring to a boil, boil ten minutes, then remove from heat, immediately pour off the hot water and run cold  tap water over them to cool down. It’s pretty effective.

The deviled eggs are a “classic” plain version. I cut back on the mayo and  add some sour cream, which makes them very creamy  tasting. I add a little vinegar to brighten the flavor. Some people will add pickle juice. I prefer not to but to each their own.

I have listed a few other deviled egg recipes I like to make. Bacon and cheddar are fantastic but I do love my bacon.

Ingredients
  

  • 12 large eggs
  • 6 tablespoons mayonnaise
  • 6 tablespoons sour cream
  • 1 teaspoon prepared mustard
  • 1-1/2 teaspoons apple cider vinegar
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • sweet paprika optional

Instructions
 

  • Hard-Cooked Eggs in the Instant Pot:
  • Place rack in inner pot of Instant Pot and add 1 cup water.
  • Place 12 eggs on the rack.
  • Cover pot with lid and set lid to seal.
  • Cook at pressure on the manual setting for 5 minutes.
  • Use the quick release valve for the steam and let steam subside before opening.
  • Open cooker and place eggs in cold water to cool.
  • Deviled Eggs:
  • Peel eggs and halve.
  • Scoop yolks into a bowl and mash with a fork until smooth.
  • Mix yolks with remaining ingredients except paprika and spoon into egg cavities or use a piping bag to fill.
  • Sprinkle with a little paprika to garnish if desired.
