Iced Pumpkin Pie Drink  is my recipe of the day with Pumpkin Week  (from September 21 -25 ).  I  have been  posting several  times this week (M-W-F) although you can find pumpkin recipes  each day using  the  hashtag #PumpkinWeek on social  media.

Monday  I posted a recipe for Hot Pumpkin Apple Cider, Wednesday I shared a recipe for Fresh Roasted Pumpkin Pizza. Today  I am sharing up an Iced Pumpkin Pie drink. I’ve been crazy for  autumn drinks this year. Perhaps you’ve noticed already as I posted mulled white wine  recently.

Besides, I must be in the mood  to sip or something. Are you?

Yet besides the usual milk laden drinks, I often like something a little different. The unsweetened refrigerated coconut milk  steps in as a perfect alternative.

However you like to have your drink, you will enjoy this, even if  you  make it with milk.

Ingredients
  

  • 1-1/2 cups refrigerated unsweetened coconut milk
  • 1/4 cup canned pumpkin puree
  • 1 tablespoon ginger flavored coffee syrup
  • 1 tablespoon pumpkin spice flavored coffee syrup
  • 1 tablespoon vanilla flavored coffee syrup
  • 1 teaspoon brown sugar
  • 1/4 teaspoon ground ginger (1/2 teaspoon for more bite)
  • 1/8 teaspoon ground cinnamon

Instructions
 

  • Whisk together and serve over ice.
