My recipe of the day, Crumb Topped Baked Cod which tops cod fillets with crushed croutons for an extra crispy topping. It is then baked for 15-20 minutes until it easily flakes with a fork.

This is a perfect weeknight dinner that I like to serve with something like gratin of potatoes or creamy buttered noodles. A perfect veggies side could be something like a tossed salad or roasted asparagus (which cooks in the oven in close to the same amount of time).
The Modern Simple and Healthy Fish
Years ago, if we wanted healthy fish, one would bake a cod loin without much more than salt and pepper, give it a drizzle of butter (that is, if you were not eating said-dread fish because you were on a diet) and a squeeze of lemon.
More elegant prep involved coating the fish in crumbs or nuts as those became popular. While some crumb can be soggy, the crushed croutons add a definitely crispy and well seasoned touch without much work.

Crumb-Topped Baked Cod
Ingredients
- 8 ounces cod loins or fillets
- 2 tablespoons mayonnaise
- 1/4 teaspoon dill weed
- 1/4 teaspoon dried chives (crushed)
- salt and black pepper
- 1 cup garlic cheese croutons (crushed)
- 2 tbsp melted butter
Instructions
- Preheat oven to 425°F.
- Cut cod loin into two thinner, 1/2-inch thick pieces.
- Season fish with salt and pepper then spread on top side with mayonnaise.
- Crush croutons and mix with dill weed, dried chives and melted butter.
- Press crumbs onto fish and place on a baking sheet.
- Bake 15-20 minutes or until fish is firm and opaque.
