Slow Cooker Pot Roast is my recipe of the day with Multicookerย Monday. My little blogging groupย has been getting togetherย onceย per month. We like toย share recipes used on small kitchen devices,ย such as theย Instant Pot, Slow Cooker and more.
It helps expand our repertoireย and get more recipes of each typeย onto ourย blogs since these machines areย among our favorites toย use.ย Which kitchen appliance do you like to useย most often? I just can’t decide.ย But Iย do want toย use them allย more, because theย moreย I use them, the moreย Iย love them!
Thisย month I amย sharing another crockpot pot roast. Pot roast is a family favoriteย here, so I likeย toย make all kinds. This recipe adds a few brownย gravy packets to punchย up the pan sauce. It willย still needย aย littleย cornstarch, as slowย cookersย notoriously produce extra moisture.
Butย it’s a niceย oneย potย meal. What do you like servingย with your pot roast? Iย could getย by with aย big bowlย full and a couple of biscuits or softย rolls.
And the leftovers always make fabulousย beef sandwiches, which Iย love schmearingย horseradish on.

Slow Cooker Pot Roast
Equipment
- Slow Cooker or Crockpot
Ingredients
- 3 pound boneless beef chuck roast
- 2 tablespoons oil
- salt and black pepper
- 2 packets Brown gravy mix (.87 ounces each packet)
- 1 teaspoon dried thyme
- 1 teaspoon herbes de provence
- 1 tablespoon Worcestershire sauce
- 2 cups water
- 1 large onion (sliced)
- 1 pound whole baby carrots
- 1-1/2 pounds petit gold potatoes (quartered)
- 8 cloves garlic (coarsely chopped)
Instructions
- Season beef and sear on both sides in a small amount of oil.
- Stir brown gravy mix packets, herbs and Worcestershire together with the water in the crock.
- Place the onions, carrots and garlic into the sauce, then layer potatoes over that, then add the beef.
- Cover cooker and cook on low for 8-10 hours.
- Remove beef and vegetables from cooker.
- Pour drippings into a saucepan, and decant any fat.
- Whisk 1 teaspoon cornstarch with 1/2 cup cold water, combine with drippings in saucepan and bring to a boil.
- Stir for one minute while it thickens.
- Adjust salt and pepper if needed.
- Serve gravy with roast and vegetables.

I have tons of Pot Roast recipes too. We probably have it at least once a month and then delicious meals from the leftovers.
That’s one bowl of comfort food. My husband would love this.
Crock Pot is definitely my favorite way to make pot roast – I could eat onions that have been cooked in the crock pot alongside a roast by themselves – it turns them into something magic! We usually just eat pot roast with all the yummy traditional veggies that get cooked alongside it (potatoes, carrots, and onion).
I know, right? Whenever I start cooking onion nd garlic Bill always asks what smells so good!
This is one of our favorite family meals too. I have to make rice as well, because we love rice and gravy.
