Slow Cooker Pot Roast is my recipe of the day with Multicooker Monday. My little blogging group has been getting together once per month. We like to share recipes used on small kitchen devices, such as the Instant Pot, Slow Cooker and more.
It helps expand our repertoire and get more recipes of each type onto our blogs since these machines are among our favorites to use. Which kitchen appliance do you like to use most often? I just can’t decide. But I do want to use them all more, because the more I use them, the more I love them!
This month I am sharing another crockpot pot roast. Pot roast is a family favorite here, so I like to make all kinds. This recipe adds a few brown gravy packets to punch up the pan sauce. It will still need a little cornstarch, as slow cookers notoriously produce extra moisture.
But it’s a nice one pot meal. What do you like serving with your pot roast? I could get by with a big bowl full and a couple of biscuits or soft rolls.
And the leftovers always make fabulous beef sandwiches, which I love schmearing horseradish on.

Slow Cooker Pot Roast
Equipment
- Slow Cooker or Crockpot
Ingredients
- 3 pound boneless beef chuck roast
- 2 tablespoons oil
- salt and black pepper
- 2 packets Brown gravy mix (.87 ounces each packet)
- 1 teaspoon dried thyme
- 1 teaspoon herbes de provence
- 1 tablespoon Worcestershire sauce
- 2 cups water
- 1 large onion (sliced)
- 1 pound whole baby carrots
- 1-1/2 pounds petit gold potatoes (quartered)
- 8 cloves garlic (coarsely chopped)
Instructions
- Season beef and sear on both sides in a small amount of oil.
- Stir brown gravy mix packets, herbs and Worcestershire together with the water in the crock.
- Place the onions, carrots and garlic into the sauce, then layer potatoes over that, then add the beef.
- Cover cooker and cook on low for 8-10 hours.
- Remove beef and vegetables from cooker.
- Pour drippings into a saucepan, and decant any fat.
- Whisk 1 teaspoon cornstarch with 1/2 cup cold water, combine with drippings in saucepan and bring to a boil.
- Stir for one minute while it thickens.
- Adjust salt and pepper if needed.
- Serve gravy with roast and vegetables.

That’s one bowl of comfort food. My husband would love this.
Crock Pot is definitely my favorite way to make pot roast – I could eat onions that have been cooked in the crock pot alongside a roast by themselves – it turns them into something magic! We usually just eat pot roast with all the yummy traditional veggies that get cooked alongside it (potatoes, carrots, and onion).
I know, right? Whenever I start cooking onion nd garlic Bill always asks what smells so good!
This is one of our favorite family meals too. I have to make rice as well, because we love rice and gravy.
