California Chicken Club Wrap is my recipe of the day with the blogging group From Our Dinner Table. We get together on Sundays to share recipes on a selected topic. This week we are offering recipes that repurpose rotisserie chicken. Which is an easy grab and go at the market on busy days.

My recipe makes good use of some spinach wraps by Mission that caught my eye. I love a chicken club, and adding in some fresh spinach leaves was perfect.

This would be wonderful with other tortilla wraps you may find as well. I have seen basil and herb as well as sun-dried tomato in various brands.

The wrap preps well if you want to make ahead and wrap in plastic to put in a brown bag lunch. I imagine a couple of days is fine, but I don’t like making my foods too far ahead. I don’t want them to lose their fresh character.

Ingredients

  • 1 Mission "Garden Spinach Herb" tortilla wrap
  • 3 ounces cooked rotisserie chicken breast sliced
  • 1 tablespoon mayonnaise
  • 1 ounce baby spinach leaves
  • 1/4 cup fresh alfalfa sprouts
  • 1/2 roma tomato sliced thin
  • 1/4 ripe avocado thinly sliced
  • 2 slices thin bacon cooked crisp

Instructions

  • Spread mayo on wrap/tortilla and add remaining ingredients.
  • Fold side edges inward, then roll up like a burrito and secure with toothpicks, or wrap tightly in plastic.
