I often look for ideas to use up a roasted chicken since the two of us usually don’t eat all of it at one sitting. I actually like having extra chicken around since it makes for a quick meal. This is my version of wanting a chicken sandwich with a little bit of Asian satay flavor along with the mild heat of sriracha.
Perfect wrapped up for a brown bag lunch. I hope you enjoy-

Sriracha Chicken Wraps
Ingredients
For the Sriracha Chicken:
- 1 pound cooked boneless chicken breast (chopped)
- 1/2 cup mayonnaise
- 2 tablespoons sriracha sauce
- 1 tablespoon grated ginger
- 2 teaspoons toasted sesame oil
- 1/4 cup chopped red onion
- 2 tablespoons toasted sesame seeds
- 3 tablespoons creamy peanut butter
- 1/2 cup finely diced celery
- 2 teaspoons rice vinegar
- 1 teaspoon sugar
For Making the Wrap:
- whole grain wraps
- lettuce
- tomato
- sliced avocado
- chopped peanuts
Instructions
- Stir together all ingredients for the chicken salad and chill.
- Serve inside a wrap with other optional ingredients as desired.
