Deck the Holly (Copycat Chicken Salad Chick) is my recipe of the day. I have a number of chicken salad recipes. This one is the holiday version of Chicken Salad Chick’s Jalapeno Holly with dried cranberries added.

Deck the Holly (Copycat Chicken Salad Chick)

I like this version of Jalapeno Holly because the craisins add a touch of sweetness that balances the spice of the jalapenos. If you take out the craisins you’d just have the regular jalapeno version.

Besides adding a touch of sweetness, the cranberries do add some color as well. This can give it a festive touch for the holiday season.

Of course, one of the things at the Chicken Salad Chick’s restaurant is foregoing the broccoli salad and adding a different chicken salad.

I have several other recipes listed below. Of course, this does give a creative opportunity to make a chicken salad sandwich bar for lunch or brunches. You could add some side salads as well. Or perhaps also a crockpot of warm soups.

But at any rate, this can put a big dent in any stockpiles of leftover roasted chicken or roasted turkey you may be the proud owner of. And no holiday is complete without the requisite sandwich of leftover bird.

Ingredients
  

  • 2 cups shredded roast chicken breast
  • 2 teaspoons ranch dressing mix
  • 1/4 teaspoon garlic powder
  • 1/2 teaspoon granulated sugar
  • 1 rib celery finely diced
  • 1/4 cup red onion finely diced
  • 1/2 cup pickled jalapeno peppers chopped
  • 1/4 cup craisins finely chopped
  • 1/4 cup sour cream
  • 1/2 cup Duke's mayonnaise

Instructions
 

  • Stir together all ingredients and chill before serving.
