Broccoli and Cheese Soup is my recipe of the day. Which has been a favorite of mine since I worked as a teenager at the Whole Loaf deli in downtown St. Louis many many years ago (1970’s). It was always popular with the customers who got it with their deli sandwiches.

Tips for Making Cheese Soup

I do think mine is just as good as theirs (probably better).

The tip in making this is to make sure when you stir the cheese in, the soup is off the heat, otherwise the heat makes the cheese break down into something horrible and stringy. And as you can see, the soup is very smooth and velvety, everything you could want for in this type of soup.

Ingredients
  

  • 1/4 cup chopped onion
  • 1/4 cup chopped celery
  • 4 tablespoons butter
  • 1/4 cup all-purpose flour
  • 1 cup chicken broth
  • 2-1/2 cups whole milk
  • 1 teaspoon salt
  • 1 teaspoon white pepper
  • 2 cups shredded cheddar cheese
  • 2 cups chopped broccoli cooked crisp-tender, and kept warm

Instructions
 

  • In a large saucepan, saute the onion and celery in butter until soft.
  • Stir in the flour, then add the broth and milk, stirring constantly.
  • Bring to a boil and boil one minute until sauce thickens.
  • Remove from heat and add cheese, stirring until it melts.
  • Stir in cooked broccoli.

  1. I absolutely love the simplicity of this soup. My family loves Broccoli and Cheese soup, so it would make not just a great lunch for my kiddos, but a nice quick dinner for busy nights too. Yum!

  2. Sue, whole loaf was one of our favorite linch places Than you for the broccoli cheese soup recipe, we had it every time we were there. You don’t happen to have a menu from those days, do you. I know, it was on the wall,! But I can’t remember which sandwich I paired with my soup. Seems like turkey, but better. Also one of my sons was in scouts with Brian Lau, your brother?

    • Brian Lau not related. The turkey sandwich maybe the one called the Downtowner which was just turkey and bacon. There was also a combo with turkey, roast beef and ham.
