Blueberry Biscuits is my recipe of the day with the blogging group Alphabet Challenge. We will be posting twice a month as we work our way through the alphabet with each recipe title or food starting with the next letter. This week we are working on the letter “B”.

For my offering, I made some blueberry biscuits to have as a quick breakfast. It’s really quick as it uses Bisquick as the base. Although you can use another brand or make some up from scratch.

These are perfect for me with my morning coffee. And a good way to add more blueberries to the menu. I adore them. Plus this time of year they start coming in from Florida.

You could eat these as is, or cut them open and smear with butter and a spoonful of blueberry jam.

Equipment

  • baking sheet; parchment paper

Ingredients
  

Biscuits:

  • 1/3 cup granulated sugar
  • 1/2 teaspoon cinnamon
  • 2 cups Bisquick baking mix
  • 1 cup fresh blueberries
  • 1/2 cup milk
  • 1 teaspoon vanilla
  • 2 tablespoons coarse crystal sugar

Icing:

  • 1/2 cup powdered sugar
  • 1 tablespoon milk

Instructions
 

  • Preheat oven to 350F.
  • Combine sugar, cinnamon, and Bisquick in a mixing bowl.
  • Rinse fresh blueberries and drain.
  • Toss blueberries in dry mixture to coat with flour.
  • Add milk and vanilla to the dry mix and stir gently to combine.
  • Drop dough by half cupful onto a baking sheet lined with parchment.
  • Sprinkle tops with crystal sugars.
  • Bake for 35 minutes or until they test done with a toothpick.
  • Mix the powdered sugar with milk and drizzle the tops of the biscuits.

  2. We LOVE blueberry muffins and pancakes so why have I never thought to add them to biscuits?!! Great idea, Sue!
