Dates with Mascarpone and Walnuts is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we’re featuring stone fruits. Glad you could join us!

Dates with Mascarpone and Walnuts

For my stone fruit recipe offering I chose dates, which I had a fresh container of in the pantry. I like to get creative with foods on hand. So I went for stuffed dates.

These would have been quite good with just mascarpone cheese and walnuts to stuff them. But I wanted to layer in more depth of flavor. That’s where orange marmalade came in nicely.

Now, we’re huge fans of cardamom here. Bill and I both adore Indian sweets and chai masala tea flavored with cardamom. And if we find a whole cardamom pod in our kheer? We pop the little pod open and munch on those seeds for bursts of intense flavor.

So it was I finished these little fellas off with a sprinkle of ground cardamom. Gives it that final extra punch of spice.

Ingredients
  

  • 2 pints whole pitted dates
  • 65 candied walnuts
  • 8 ounces mascarpone cheese
  • 1/4 cup orange marmalade
  • 1/8 teaspoon ground cardamom

Instructions
 

  • Stir together the orange marmalade and mascarpone until smooth.
  • Fill cavities of dates with the cheese mixture and press a walnut piece on top.
  • Sprinkle with a touch of ground cardamom.

    These are delicious! I couldn’t eat just one. The marmalade and hint of cardamom brought a smile to my face.
