Emerald Isle Pub Spread is my recipe of the day with the blogging group Alphabet Recipe Challenge. We post recipes with ingredients or keywords that reflect each upcoming letter of the alphabet, in succession. This week we are on letter “E”. Glad you could join us!

For my selection I am sharing a copycat recipe for some cheese spread I have been buying and enjoying for years: the Emerald Isle Pub Spread made and sold out of Dorothy Lane Markets (DLM) inย theย metro area of Dayton Ohio (and soonย opening another locationย inย Mason Ohio).
The cheese isย white cheddar based, withย horseradish added, along withย scallions, parsley, garlic and chives. Perfect to enjoy with your green beer on St. Patrick’s Day or any day for that matter.

Equipment
- Food Processor
Ingredients
- 7 ounces Irish white cheddar cheese finely shredded
- 4 scallions
- 1 tablespoon Italian parsley
- 8 ounces cream cheese softened
- 2 tablespoons prepared horseradish
- 1/4 cup mayonnaise
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 2 tablespoons dried chives
Instructions
- Shred the cheddar in a food processor fitted with a fine shredding disk; set the cheese in a bowl.
- Pulse scallions and parsley in a food processor fitted with a chopping blade until finely chopped. Add the herbs to the same bowl.
- Place the room temp cream cheese, horseradish, and mayo in the food processor and run until smooth.
- Fold the cream cheese mixture into the cheddar cheese and minced herbs along with the remaining seasonings.
- Garnish with additional scallion if you like but not required.

I love a good cheese spread and this one has a great flavor profile and is the perfect color for St. Pat’s Day.
It’s real good for game day when having people over to watch sports.
