Slow Cooker Chili con Carne is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring crockpot recipes for October, or Crocktober as we’re calling it. Glad you could join us!
October seems like a good time for chili. Temperatures are (supposed to be) moderating and turning more to mid-autumn ranges. Football is in full swing. The Hatch chili roaster was even outside Jungle Jim’s International Market today (and of course I went home with a couple of still-warm containers of freshly roasted Hatch chili peppers!).
This recipe even features some roasted Hatch chilies, as well as stew beef. I chose to add beans because we like our chili that way more often than not. Given the crockpot all-day treatment, it makes for a hearty and flavorful bowl of red. Perfect for gameday, family get-togethers, or just a ready-when-you-are dinner. Hope you enjoy!

Slow cooker chili con carne
Equipment
- 1 Slow Cooker or Crockpot
Ingredients
- 3 tablespoons oil
- 3 lb stew beef cut into chunks
- 1 large onion chopped
- 2 teaspoons salt
- 2 teaspoons black pepper
- 2 tablespoons chopped garlic
- 1 teaspoon dried oregano
- 1 tablespoon ground cumin
- 2 tablespoons chili base
- 28 Oz canned whole tomatoes
- 28 oz tomato puree
- 3 tbsp chili powder
- 1 tsp cayenne pepper
- 2 cups chopped roasted Hatch Chiles
- 2-15 oz cans kidney beans
Instructions
- Brown the beef, onions and oil first if you like more flavor.
- Add the brown beef to the crock pot.
- Stir in the seasonings and everything through the tomato puree.
- Begin cooking on the low setting for 8 hours.
- Halfway through cooking at the remaining chili powder cayenne pepper and hatched chilies.
- 30 minutes before serving at the kidney beans and stir.
- Check for salt amounts before serving and adjust if needed.
