Chili Macaroni and Cheddar Bake

Chili Macaroni and Cheddar Bake is my recipe of the day. I am posting with Improv Cooking Challenge, which meets monthly to post on a variety of topics combining two ingredients together in a single recipe.
This month we are putting together corn and cheese. Since we are heading into early fall, my thoughts have been leaning towards chili and comfort foods. So I decided to put together a casserole using these ingredients.
The corn and the cheese go very well with the chili, macaroni and beans. This is a dinner you can put together in a flash and one most children will love.
Cook Ahead for Convenience
Besides using canned products you might choose to use some you have made ahead, such as freezing packs of cooked beans or chili. That would keep things economical while still saving time.
I often will cook a larger quantity of something and make freezer stash packs, especially since we are a small family now. Today I even have some Italian sausage and hamburger ready to become some meatballs just so I can have them prepped, cooked and easy to thaw for things like spaghetti, meatball sandwiches, or party meatballs.
Pivoting to Plan “B”
I never know when I am going to get busy suddenly, or have something happen like getting a headache or just not feeling like cooking and wanting something quick and easy.
ALthough we all like take-out, most of that isn’t very good and is often overpriced.

Chili Macaroni and Cheddar Bake
Chili Macaroni and Cheddar Bake
Ingredients
- 1 pound ground beef
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 1/2 teaspoon salt
- 1/2 teaspoon black pepper
- 1 cup frozen corn
- 3 cups uncooked macaroni noodles
- 15 ounce can chili with no beans
- 15 ounce can red kidney beans rinsed and drained
- 10 ounce can Rotel tomatoes and green chillies undrained
- 15 ounce jar nacho cheese sauce
- 1 cup shredded cheddar cheese
Instructions
- Preheat oven to 375F.
- Cook macaroni according to package directions and drain.
- While pasta is cooking, brown ground beef, onion, garlic, salt and black pepper in a skillet; drain fat.
- Stir in the frozen corn, no-bean chili, rinsed and drained kidney beans, and the undrained can of tomatoes and green chillies.
- Heat through, then stir in the jar of nacho cheese sauce until it is incorporated.
- Stir in the cooked noodles.
- Place chili mac into a lasagna or oblong baking pan sprayed with nonstick cooking spray.
- Sprinkle the top with the shredded cheddar.
- Bake 25 minutes or until casserole is hot and cheese is melted.
