Strawberry Stuffed Keto French Toast is my recipe of the day with the blogging group From Our Dinner Table. We post weekly, doing various recipes on selected topics. This week we will be posting French Toast Recipes. Glad you could join us!
This is a recipe I made when we were focused on low-carb or keto eating. One of the difficult things about these types of diets is missing all the carb heavy things many of us are used to eating. Especially at breakfast.
So many breakfast and brunch items are excluded when eating keto meals. Pancakes, waffles, French toast, biscuits, muffins – unless you adapt them and make a keto-friendly version. So that’s what I did here, making keto French toast. Instead of regular flour this uses almond flour as a base, with eggs and a little baking powder. Mix that up, pour into a greased ramekin, pop into the microwave and 90 seconds later you have an individual keto bread.

Strawberry Stuffed Keto French Toast
I also wanted this to be a little extra special. So instead of making plain French toast with a sugar free syrup I opted for stuffed French toast with a strawberry filling. And drizzled it with a touch of sugar free flavored syrup and dusted with powdered sugar replacement.
Of course, you could also switch up the filling and try seasonal variations, like pumpkin, apple, blueberry, and so on. In any case, if you’re looking to lighten up your breakfast or brunch or following a keto diet I hope you’ll try this and that you enjoy it. We both enjoyed this a lot!

Strawberry Stuffed Keto French Toast
Equipment
- 2 -1/2 cup baking ramekins
Ingredients
Keto French Toast:
- 2 egg
- 2 tablespoon melted cooled butter
- 6 tablespoons almond flour
- 1 teaspoon baking powder
Strawberry Filling:
- 4 ounces cream cheese
- 1/4 cup chopped strawberries
- 1 tablespoon Swerve granular erythritol
Sprinkle:
- 1 teaspoon Swerve confectioner's blend
- 2 tablespoons Da Vinci sugar-free vanilla syrup or other sugar-free vanilla syrup
Instructions
- Butter 2 individual (1/2 cup capacity) ramekins.
- Combine ingredients and pour half into each ramekin.
- Microwave each for 90 seconds.
- Slice each bread in half and griddle in a nonstick sprayed skillet until golden.
- Mix strawberries with softened cream cheese and Swerve or sweeten to taste with whatever you're using for sugar.
- Sprinkle with a little more Swerve and drizzle with syrup.
