Magic Pan Orange and Almond Salad  is  my recipe  of  the day with the blogging group Alphabet Recipe Challenge. For my “A” recipe, I am sharing Almond recipes. The featured recipe is like  one I had years ago at the Magic Pan restaurant while visiting Milwaukee. Later on I tried a recipe at Recipezaar. I’ve tweaked that somewhat although much is the same. I hope you enjoy  it as  much as I always have. Perhaps you’d like to try your hand at making crepes while you are at it?

Equipment

  • 1 salad bowl and serving tongs

Ingredients
  

Salad:

  • 8 ounces chopped romaine lettuce
  • 8 ounces Spring mix lettuce
  • 10.5 ounce can mandarin orange segments drained
  • 1/2 cup sliced toasted almonds

Dressing:

  • 1/2 cup extra virgin olive oil
  • 6 tablespoons tarragon vinegar
  • 6 tablespoons orange juice
  • 1 teaspoon Dijon mustard
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 2 tablespoons granulated sugar

Instructions
 

  • Whisk together ingredients for dressing.
  • Toss greens with most of the dressing.
  • Arrange orange segments and almonds on top and drizzle the last of the dressing over.

  1. Oh my gosh……I used to love the Magic Pan. My favorite was the Jacques Coquilles Crepes. I think I might make a copycat of that to serve with this wonderful salad. Thanks for the food memories.

    Sue, I am down with a nasty viral infection and don’t feel like eating anything, which is quite unusual for me. As I was going through your post, got tempted to have the salad. I made it as I had all the ingredients at hand. Loved it. So citrusy, delicious and made me feel good. Thanks for the recipe.
