This is a series I am doing on quick, simple and healthy breakfast you can make in the microwave in about one minute, all with Weight Watchers SmartPoint totals.
With this, there is no reason not to enjoy a hot breakfast. All high-protein, low carb.
I will be posting groups of different types of these whenever I get sever new ones made (enough for a week of options).
One Minute Breakfast Cups
- 1 minute prep
- 1 minute cook
Kimchi-Kale (3 smartpoints)
- 1 large egg
- 1/4 cup baby kale leaves, chopped
- 1 tablespoon chopped kimchi
- 1 scallion, chopped
- 2-3 drops tamari or soy sauce
- 2-3 drops sesame oil
- salt and pepper
Parmesan Kale (3 smartpoints)
- 1 large egg
- 1/4 cup baby kale leaves, chopped
- 1 teaspoon Parmesan
- 1 scallion, sliced
- 2 teaspoons reduced fat sour cream
- salt and pepper
Cheddar Chive (4 smartpoints)
- 1 large egg
- 1/4 cup chopped baby spinach
- 1 tablespoon grated Cheddar
- 1 tablespoon diced ham
- 1/2 teaspoon dried chives
- salt and pepper
- 1 teaspoon half and half
Korean Chicken (3 smartpoints)
- 1 large egg
- 1 tablespoon chopped kale
- 1 tablespoon grated Cheddar
- 1 tablespoon chopped kimchi
- 1 tablespoon chopped cooked chicken
- salt and pepper
- 1 teaspoon half and half
Maple-Blueberry (3 smartpoints)
- 1 large egg
- 1 tablespoon chopped fresh blueberries
- 1 tablespoon plain instant oats
- 1 teaspoon sugar-free maple syrup
Mushroom-Swiss (3 smartpoints)
- 1 large egg
- 1 crimini mushroom, minced
- 2 teaspoons grated Swiss cheese
- 1 teaspoon dried chives
- salt and pepper
Buffalo Chicken (3 smartpoints)
- 1 large egg
- 1/2 ounce chopped cooked chicken
- 1/4 cup chopped baby kale
- 1/2 teaspoon Louisiana hot sauce
- 1 1/2 teaspoons blue cheese dressing
- salt and pepper
Method:
- Spray individual ramekins with nonstick spray.
- Whisk together ingredients for breakfast cup in a small bowl and pour into ramekin.
- Microwave on high for one minute or until puffed.
