Apple Granola Cookie Butter Toast

This week for Sunday Supper the theme is all about after-school snacks. I decided to share my simple recipe for Apple Granola cookie butter toast which uses either cookie butter from Trader Joe’s or the Biscoff brand of cookie butter, either of which are very good.
For the toast I used a wholesome whole grain seeded loaf, but equally well, something like raisin bread would be quite nice. Topped with the cookie butter, and then thinly sliced fresh autumn apples are placed on top and drizzled with honey before a light sprinkle of crunchy granola is added on top.

If you are looking for something the kids can make for themselves after they come home hungry after hopping off the school bus, you don’t need to go any further.

Be careful not to look at the eclipse with naked eye- it could cause damage, and likewise, the sensor in your camera may not be up to the task either.
Apple Granola Cookie Butter Toast

Ingredients:
- 4 slices seeded whole-grain bread, toasted
- 1/3 cup cookie butter, biscoff spread, nutella, peanut butter or other nut butter (such as cashew)
- 1 small gala apple, cored and thinly sliced
- 1/4 cup good granola
- 4 teaspoons liquid honey
Method:
- Toast bread and spread with cookie butter.
- Top with apple slices.
- Drizzle with honey and sprinkle with crushed granola (honey helps it stick).
