Jalapeno Lime Glazed Chicken

Jalapeno Lime Glazed Chicken is my recipe of the day withย my blogging group Baking Bloggers. We meet up once perย month to post on various food topicsย and share aย recipe. We’llย take a vote andย whateverย oneย the groupย decides is it.
This month we are discussingย and sharing recipes for using jams and preserves inย baking. I decided to share my recipe for Jalapenoย Limeย Glazed Chicken with you. It is a riff off another recipeย I did years ago at Recipezaar.ย Thatย recipe was more of a quick stir-fry in a skillet.
This one I happened to make using bone-in chicken breasts. The idea is to bread them, brown in a skillet and then finish in the oven. It makes for a nice oven-fried type of chicken.
The sauce is made on the stove top using a jalapeno pepper jelly and a few other ingredients, such as fresh jalapenos. The sauceย is then spooned over the finished chicken. The best partย about that is if you have kids or someone whoย doesn’t eatย spicy, you can just leave that part off and still have some tasty chicken.
Theย breast Iย had were ginormous (I did try for the smallest onesย I could find). You can use other pieces. Just watch the timing on smaller ones as the overall bake time will be less.
Youย can serve this with steamed rice, as I have. Or perhaps youย have anther idea for what you’d like with it.

Oh my goodness…and the fact that you put that glaze all over fried chicken makes me thing you are AMAZING!!!
Oven “fried” chicken with jalapeรฑo glaze sounds and looks like something everyone in my family would love, especially since you added extra fresh jalapeรฑos, Sue. Yum!
Pepper jelly and chicken are so perfect paired together. I love that you added even more peppers.
This sounds fabulous – a perfect cozy warm meal for a cool day!
I had a pepper mishap this summer where I ended up with multiple pounds of hot peppers and thus, multiple jars of hot pepper jelly. I’m definitely making this right away.
The melted pepper jelly makes a great dip for things like jalapeno poppers (which is here I use pepper jelly most)
Jalapeno glaze on chicken, looks so delicious!
I already put pepper jelly on my grocery list, thanks to Wendy, and now I’ve got another recipe I can use it in. I’ve always got jalapeno’s on hand, either fresh or frozen. I wonder how my hot hatch chiles would work in this. hmmmm
It looks delicious! The jelly topping is beautiful! I am forwarding this recipe to my friend who loves jalapeno jelly!
