Mesquite Grilling Marinade on chicken

I am sharing with you today my recipe for homemade mesquite marinade for meats.

I have enjoyed using mesquite in marinades since the 1990’s. Especially chicken. Now I’ve read that mesquite will “overpower” the flavor of chicken. But I have never thought so.

And mesquite marinade is one of my favorites to pour on chicken and freeze. Then thaw it later to throw on the grill. It will cook up in minutes. I remember years ago crutching on it when my husband was doing special military duty and I was hanging dinners with just me and my daughter. Having small packs was perfect for an easy supper answer.

Ingredients
  

For the meat:

  • 1 pound boneless chicken tenders (or other meat)

For the marinade:

  • 3 tablespoons fresh lime juice
  • 2 tablespoons granulated sugar
  • 1 teaspoon molasses
  • 1/2 teaspoon salt
  • 1 teaspoon Mesquite liquid smoke flavoring
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon soy sauce
  • 1/8 teaspoon anchovy paste
  • 1 teaspoon onion powder
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • 1 teaspoon black pepper
  • 1 tablespoon olive oil

Instructions
 

  • Mix ingredients for marinade and use on one pound meat of your choosing.
  • Mix marinade and add to meat.
  • Marinate six hours or overnight.
  • Drain meat from marinade and cook over coals until done to your liking.
