Hawaiian Cole Slaw is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we focus on fresh fruits and veggies. Glad you could join us!

This Hawaiian Cole Slaw is more inspired by Hawaiian flavors than what might be traditionally authentic. I sometimes make an inspired recipe while at others I lean toward authentic.

I love this with Hawaiian foods of course, but I think it goes well with any food typical for summer, a cookout or barbecue and even a holiday ham.

Ingredients

  • 10 ounces shaved cabbage angel hair cut
  • 1/2 cup minced carrot
  • 5 ounces spam or cooked ham diced and vrowned
  • 1/3 cup chopped red onion
  • 2 ounce jar diced pimientos drained
  • 1 cup fresh pineapple tidbits
  • 1 tablespoon minced fresh parsley
  • 1/2 cup mayonnaise
  • 1 teaspoon Island teriyaki sauce sub soy sauce
  • 1 teaspoon rice vinegar
  • 2 teaspoons honey
  • 1/4 teaspoon toasted sesame oil
  • salt and pepper

Instructions

  • Combine ingredients and chill before serving.
