Spinach and Feta Salad with Summer Fruits is my recipe of the day with the blogging  group Improv Cooking Challenge. Each month the members post recipes utilizing two of the select ingredients in a single recipe. This month we are sharing (blue) berries with dairy.

It was my  bad luck  that  while  I wanted to  do this recipe, it was one I had made months earlier. And my brain spaced and was trying  to  remember it as being blueberries. When in fact, they are black raspberries.

Of course, you can use any berry you like in this. Black raspberries, raspberries, blackberries, blueberries, strawberries, whichever. But I am lucky enough to  have blogging friends that will bend the ingredient combo to berries on the whole. Because I am funny about honesty in recipes and would not post it otherwise.

It is a good salad and  you will find that fruit with feta and the pistachio oil and nuts are fabulous. You can probably squeak by with evoo if you don’t have pistachio oil, but if you can, give it a try. Evoo won’t taste as good.

Ingredients
  

Salad:

  • 16 ounces spinach leaves
  • 10 ounces chopped ripe cantaloupe
  • 4 ounces black raspberries
  • 4 ounces crumbled feta cheese
  • 1-1/2 ounces toasted pistachios

Dressing:

  • 1 tablespoon pistachio oil
  • 1 tablespoon white balsamic vinegar
  • 2 tablespoons extra-virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1/8 teaspoon salt
  • 1/8 teaspoon black pepper
  • 1/2 teaspoon granulated sugar

Instructions
 

  • Whisk together the dressing and toss with spinach.
  • Divide into salad bowls.
  • Top with fruit, nuts and cheese.

  1. I always skip interesting oils but now I feel the need to try out some.pistachio oil. Thankfully now I have a great new recipe to test it out on, thanks for joining!
