My offering is for chopped smoked pork with apples and potatoes in a skillet. It is cooked with a sweet and tangy sauce until tender.
You could serve this as a meaty side dish or as a light supper, depends on your appetite.
The pork chops are already smoked and sold in packages in the grocers meat case near the bacon.

Pork Potato and Apple Skillet
Equipment
- 1 nonstick covered skillet
Ingredients
- 3 tablespoons olive oil
- 1/2 cup chopped onion
- 1 teaspoon minced garlic
- 2 pounds white potatoes peeled and sliced
- 3 medium honey crisp apples peeled, cored, and sliced
- 11.5 ounce package smoked pork chops diced
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 teaspoon celery seed
- 2 tablespoons granulated sugar
- 2 teaspoons mustard
- 1 tablespoon minced Italian parsley
- 1/2 cup apple cider vinegar
- 1/2 cup chicken broth
- 1 cup apple cider
- 2 cups water
- 2 tablespoons cornstarch
Instructions
- Cook onion and garlic in olive oil until onion softens.
- Add potatoes, apples, pork and cook, covered for ten minutes.
- Add remaining ingredients and continue cooking without pan lid for another 25 minutes or until sauce has thickened and potatoes are tender.
