Pork, Potato and Apple Skillet

My  offering is for chopped smoked pork with apples and potatoes in a skillet. It is cooked  with a sweet and tangy sauce until tender.

You could serve this as a meaty side dish or as a light supper, depends on your appetite.

The pork chops are already smoked and sold in packages in the grocers meat case near the bacon.

Equipment

  • 1 nonstick covered skillet

Ingredients
  

  • 3 tablespoons olive oil
  • 1/2 cup chopped onion
  • 1 teaspoon minced garlic
  • 2 pounds white potatoes peeled and sliced
  • 3 medium honey crisp apples peeled, cored, and sliced
  • 11.5 ounce package smoked pork chops diced
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 teaspoon celery seed
  • 2 tablespoons granulated sugar
  • 2 teaspoons mustard
  • 1 tablespoon minced Italian parsley
  • 1/2 cup apple cider vinegar
  • 1/2 cup chicken broth
  • 1 cup apple cider
  • 2 cups water
  • 2 tablespoons cornstarch

Instructions
 

  • Cook onion and garlic in olive oil until onion softens.
  • Add potatoes, apples, pork and cook, covered for ten minutes.
  • Add remaining ingredients and continue cooking without pan lid for another 25 minutes or until sauce has thickened and potatoes are tender.
