Cheese Muffuletta (Vegetarian) is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week’s theme is “eat outside day”. Glad you could join us!

For my recipe I decided to share my vegetarian cheese muffuletta recipe. A traditional muffuletta includes a variety of Italian deli meats in addition to cheese and marinated olive salad. This version obviously omits the meats, opting for two kinds of cheese and additional pickled veggies instead.

I think this makes a perfect lunch to take on a picnic or eat on a deck or patio. Especially if you’re having some of this delicious early autumn weather like we’ve had this past week in southern Ohio!

Equipment

  • plastic wrap

Ingredients

  • 1/2 cup (Racconto) olive salad muffuletta olive mix
  • 1/2 cup pitted black olives chopped
  • 1 teaspoon minced garlic
  • 1/2 cup giardiniera
  • 1/2 cup of roasted red peppers
  • 2 tablespoons extra virgin olive oil
  • 2 tablespoons wine vinegar
  • 1/4 teaspoon red pepper flakes
  • 4 ciabatta rolls 3 oz each
  • 6 oz sliced provolone cheese 12 slices
  • 1 lb fresh buffalo mozzarella cheese sliced

Instructions

  • Mix olive mix with finely diced roasted red peppers and finely chopped pickled giardiniera and ripe pitted black olives.
  • Dress mixture with olive oil, vinegar, and pepper flakes.
  • Spread mixture on the insides of split ciabatta rolls and sandwich sliced cheese inside.
  • Press sandwiches firmly and wrap tightly with plastic wrap for about an hour.
