Vietnamese Sesame Shrimp Noodles (Mi Xao Tom) is my recipe of the day with the blogging group Alphabet Recipe Challenge. We meet everyย other week to post recipes on ascending letters of the alphabet from A-Z.ย This week we are sharing recipes involving the letter “X”. Myย letter X is for “Xao”, the Vietnamese word for Stir-Fry.
Along with “Xao” we also have the words “Mi” which stands for noodles. And “Tom”, which refers to shrimp.
Iย like this dish for it’sย lightย flavor,ย not beingย heavyย on sauces or deep fried ingredients. Most people who knowย me know Iย have been onย a long termย weight reducing regimen. I do allow myself aย normalย dinner, but like to keep it lighter. And of course my portion size is reduced for losing weight.
These noodles aren’t spicy orย anything. However, if youย like, I recommend adding a touchย of non-fermented chili paste (sambal) over something like Sriracha, whichย is also chiliย paste, but is fermented soย the flavor is different. But you should use whatever you prefer, if any at all.

Vietnamese Sesame Shrimp Noodles (Mi Xao Tom)
Equipment
- 1 large deep skillet or wok skillet
Ingredients
Noodles:
- 8 ounces thin spaghetti cooked al dente
- 6 ounces shrimp peeled and deveined
- 1 tablespoon peanut oil
- 2 tbsp butter
- 1 small red bell pepper cut into strips
- 4 ounces broccoli florets
- 2-1/2 ounces snow pea pods trimmed
- 1/2 cup carrots shredded or diced
- 1 fresh jalapeno sliced
- 2 scallions thinly sliced
Sauce:
- 1/4 cup oyster sauce
- 1 tsp garlic chopped
- 1 teaspoon grated ginger
- 1 tablespoon soy sauce
- 2 tbsp honey
- 1/2 cup orange juice
- 1 tablespoon dark sesame oil
- salt and pepper to taste
Instructions
- Stir together the sauce and set aside
- Cook noodles until al dente and drain.
- Heat peanut oil in a large deep skillet; stir-fry the peppers and pea pods until crisp-tender. Leave the scallions aside for a moment.
- Add the shrimp and cook until lightly curled.
- Add the noodles (give them a rinse and drain if they're stuck together), along with the sauce and salt and pepper to taste.
- Serve when heated through.

What a great way to use the letter x. Knowing it stands for stir-fry, it opens up all kinds of possibilities for next year.
I’m going to have to remember that Xao means stir-fry for next year! This stir fry sounds super delicious with the sesame, noodles, and all of the vegetables, not to mention the shrimp.

I haven’t had angel hair spaghetti in years! Love the color from the veg, and my youngest would go wild over this, especially with the shrimp.
Sue what a wonderful recipe using the letter X. Adding xao to my alphabet list for the future. I like noodles that are light and not too spicy. Don’t know why I don’t use Vietnamese noodles that often. I should.
So, I think I may just have found my X recipe for next year. This sounds delicious…counts as a X…and is something that I would definitely like to eat on almost any day of the week!!!
