Korean Short Ribs (Galbi) is my recipe of the day with the blogging group Eat the World. We gather on the tenth day of the month at ten a.m. to share a recipe from a different country that we havenโt โbeen to yetโ. This month we’re off to Korea.
For my selection I am sharing Korean short ribs (Galbi) which are marinated thin Flanken ribs that are grilled. I enjoy making these often when I come across the meat at the market.
You can buy the meat with the little oval bones or not. I prefer without since it can be tedious chewing around those. The bones also increase the grilling time as well. You probably would like to keep them less done so as not to become tough. Especially if you are using a chuck version of short rib.
I like serving these with rice, and lettuce leaves with either ssamjang paste or gochujang paste (ssamjang is seasoned) as lettuce wraps and include some grilled scallion with that. On my rice in the square photo, that is a little sriracha as I like things pretty spicy sometimes.

Korean Short Ribs (Galbi)
Equipment
- 1 Grill
Ingredients
Galbi:
- 1 pound boneless chuck short ribs or beef flanken ribs
- 1 cup Asian pears diced, peeled, cored
- 1/2 cup light soy sauce
- 1/4 cup Shaoxing rice wine
- 2 cloves garlic minced
- 1 teaspoon gochujang paste
- 1 teaspoon sesame oil
- 1/4 cup sugar or honey
- 1/2 teaspoon black pepper
Finishing:
- Boston lettuce leaves optional
- grilled scallions optional
- Sriracha paste optional
- Korean chili paste optional
- Toasted sesame seeds optional garnish
Instructions
- Place all ingredients (except beef) in a food processor and puree until smooth.
- Use that as a marinade and marinate beef 6 hours or overnight.
- Grill over hot coals for 10-12 minutes, turning once.
- Serve grilled beef thinly sliced with lettuce leaves with gochujang or ssamjang paste.
- 4 servings.
