Mushroom pizza grilled cheese is my recipe of the day with the  From My Dinner Table blogging group.

We are sharing our best creative grilled cheese sandwiches and inspiration for “All the Grilled Cheese” this Sunday.

Grilled cheese is one  of my favorites, but so is pizza. I can’t decide. Can you? Then why not have both?

A little short on groceries, I was happy to still have some mushrooms in  the fridge along with some extra pizza sauce, and some sourdough bread.

Usually the sourdough disappears pretty fast between toast for breakfast and other things.

But the cheese I always manage to have as I keep a good supply. Bill is a Wisconsin cheesehead so it is pretty  much a law around here. Plus I am  pretty fond of it myself.

I enjoy getting the opportunity to have a vegetarian meatless lunch as well. I am not  strict, but I do enjoy meatless.

Who am I kidding? I enjoy everything.

Mushroom Pizza Grilled Cheese

Ingredients

  • 1 cup sliced mushrooms
  • 1 tablespoon butter
  • 1/4 teaspoon minced garlic
  • 1/4 teaspoon dried oregano
  • pinch each of salt pepper, and red pepper flakes
  • 1 teaspoon Parmesan
  • 1/4 cup shredded mozzarella cheese
  • 2 tablespoons pizza sauce
  • 2 slices sourdough bread
  • 1 tablespoon soft butter for the bread

Instructions

  • Saute mushrooms in butter until soft.
  • Butter bread on both sides and assemble remaining ingredients as filling.
  • Griddle over low heat until golden on both sides.
