Fresh Tomato Salad is my recipe of the day. This is something I will quickly whiz up in the blender to pour over my garden tomatoes when I slice them.
I grew up having fresh garden tomatoes every single day at supper after my Mom would collect those and add them to the table- generally with some radishes and scallions plus maybe a cuke salad.
In recent years it has been de rigueur to serve them with aged balsamic. And some chiffonade of basil.
This easy vinaigrette uses balsamic as well, although it is the white type so as not to muddy the color. And I have added some chives that I snatched up while picking at the basil plant. Fresh summer herbs are wonderful!
I used some of my Thai basil in the photos since I needed to pinch that one back a little. You can use sweet basil or purple basil as well. The Thai type just has a bit more of a peppery bite. But I like peppery salads anyway.
This will have Parm whizzed in the dressing and some on top as well because, you know. Why sandbag when it comes to cheese?
Retro Plate
My plate (just to annoy everyone who is in a big hurry to get to the recipe *LOL*) is an antique chalkware Hawaiian plate in a triangular pineapple design with an orchid design on it. It doubles as a shallow bowl.
It complements the Fiesta Ware that I love. I can’t help you with a link but check eBay for triangular mid-century plates. You might get lucky.
I know some of you out there have the same collecting bug that I do. And for those that don’t? Okay, we’re moving on now. 😉

Fresh Tomato Salad
Equipment
- Blender or food processor
Ingredients
- 1/4 cup white balsamic vinegar
- 1/4 cup olive oil
- 1 tablespoon snipped fresh chives
- 1/4 cup fresh basil leaves
- 1/2 teaspoon each salt and black pepper
- 1/4 cup freshly grated Parmesan cheese
Instructions
- Puree in blender.
- Drizzle over sliced garden tomatoes with additional Parmesan cheese on top.
