Shredded Chipotle Chicken Tacos  is  my recipe of the day with the blogging  group Sunday Funday.  We  join  up on Sundays when we all post a fabulous recipe on a communal  topic.

Today we are sharing  taco  recipes since our host Wendy chose it. She  can’t  get enough tacos. None of us can. I’d   say it’s a sickness but hey. I feel great every time  I eat them! Don’t you?

In  fact, why just settle for Taco  Tuesday when you can have a Taco Sunday (and in fact, tacos every day of the week)?

Todays tacos are  cooked in the slow cooker (or  crock  pot). It’s  really quite easy. Toss everything into  the crock sometime before or after lunch, and it should be ready six hours  later for  dinner.

Lift the chicken out, shred with two forks like claws. Shredding meat always brings out  the animal in us, doesn’t it?

Then  moisten with a bit of the pan juice. From there, build your own adventure.

Yes! Look at all that  moist yummy chicken, cuddling away with  lettuce, tomato, crumbled  cheese, sour cream and a sprig of cilantro. Yum.

Equipment

  • Slow Cooker or Crock Pot

Ingredients

To Cook:

  • 1-1/2 pounds boneless skinless chicken breast
  • 1/4 cup water
  • 1 cup mild jarred salsa
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/2 teaspoon minced garlic
  • 2 canned chipotle chiles (minced)
  • 2 tablespoon adobo sauce (from can of chipotles)

To Build:

  • 10 taco size flour tortillas (warmed)
  • shredded iceberg lettuce
  • diced ripe tomato
  • crumbled queso fresco cheese
  • sour cream
  • salsa or taco sauce

Instructions

  • Place chicken in the slow cooker.
  • Stir up the water, salsa, cumin, salt, pepper, garlic, minced chipotles and adobo sauce.
  • Pour the sauce over the chicken, cover the crock and cook on low for six hours.
  • Lift out the chicken, shred with two forks and moisten with as much pan sauce as you like (you won't need all of it).
  • Serve chicken on warmed tortillas with toppings of choice.
