Apples and Cinnamon Oatmeal is my recipe of the day for National Oatmeal Month. My blogging friends and I want to celebrate by sharing our most delicious oatmeal recipes with you.

This is a very simple way to dress up your healthy oatmeal breakfast.
When I was a kid I always enjoyed getting the Quaker instant oatmeal breakfast before school. My mom would buy the variety packs. And my brothers and I would each have our favorite flavors. Mine was the apple one.
Of course, in more recent years I have come to enjoy steel cut oatmeal when I am not making regular oats. But I don’t really bother with instant oatmeal anymore. Oatmeal is easy enough to cook and making an apple topping is easy as well.
This apple stir-in can be prepared in advance, so you can make it the night before and just reheat in the morning if you are in a hurry. I know that is an important concern for many people in the rush of the morning hours.

Apples and Cinnamon Oatmeal
Ingredients
Oatmeal:
- 6 servings oatmeal (cooked according to package directions)
- milk or cream (optional)
- Additional brown sugar (optional extra sweetener)
Apple Stir-In and Topping:
- 2 tablespoons butter
- 3 medium apples (peeled, cored and chopped)
- 1/4 cup brown sugar
- 1 teaspoon apple pie spice (may sub cinnamon)
- 1/2 cup apple cider (may sub apple juice)
- 1/4 teaspoon vanilla extract
Instructions
- Peel, core and chop apples and saute in a large nonstick skillet with 2 tablespoons butter until apples start to soften.
- Then stir in the apple pie spice, cider and brown sugar, and continue cooking the apples are tender and mixture is thick and saucy.
- Remove from heat and stir in the vanilla.
- Stir one cup of the apple mixture into the pan of oatmeal and use the rest as a topping.
- Taste and if you like yours even sweeter, stir in a little more brown sugar. Everyone likes theirs different.
- Serve with a little milk or cream if desired.
