Balkan Lamb and Rice Casserole (Djuvec) is my recipe of the day with the blogging group alphabet Recipe Challenge. Every two weeks, group members share a succession of recipes having something to do with the current letter (which is “D”).
For my selection, I am sharing a Balkan rice casserole which is oven baked and served as a one dish meal.

Djuvec is a rice casserole that contains meat, peppers, eggplant with sauce that bakes up into a tasty casserole or one dish meal. While it may look really spicy it is only mildly so. The yogurt sauce helps to tame any potential heat as well as add a lightly tart tang from the yogurt.

Balkan Lamb and Rice Casserole (Djuvec)
Equipment
- 1 (Oven safe) covered casserole or Dutch oven
Ingredients
- 1-1/4 pounds boneless lamb cubes
- 2 tablespoons olive oil
- 1/2 teaspoon black pepper
- 1 onion chopped
- 1 teaspoon chopped garlic
- 2 teaspoons paprika
- 1 ounce pouch Lipton vegetable recipe dry soup mix
- 1-3/4 cups hot water
- 19.4 ounce jar Ajvar vegetable spread
- 1 cup long grain rice rinsed
- 1/2 cup plain thick yogurt
- 2 tablespoons water
Instructions
- Preheat oven to 350F.
- Ina large oven proof casserole dish or Dutch oven (with a lid for the oven) season the lamb and brown with the onion and garlic in the oil .
- Stir in the paprika, soup mix, hot water, Ajvar, and rice.
- Bring to a boil then cover and place in the preheated oven.
- Bake for one hour, stirring every twenty minutes.
- After removing from the oven, tuck a clean dry dishtowel under the lid and let rest ten minutes to absorb excess steam.
- Fluff with fork and dish up.
- Thin yogurt with some water to a drizzling consistency and drizzle over the rice.
