My  recipe of the day  is for beef and tomato macaroni  soup with the Soup Swappers group. We post once a month on  the  topic of soups,  although  just  looking back, I realize  I haven’t been in the recipe hare since April.

For whatever reason I wasn’t doing soups over the summer, at least now I am back.  Autumn  is upon us this very  day and  with it comes my cravings for soup.

One of the things I consistently  crave when I feel  yuck- is a macaroni  goulash. And not that I am thinking anyone should feel yuck, but with the  coming cold weather also comes  someone coming down with the cold or flu sooner or later.

Or even just feeling blah with the waning sunshine. Ohio has a tendency to  become overcast most of the autumn and winter.

Comfort Food Cravings,  Retro Style

I like  the  idea of  this  as comfort food,  and it has been comforting to me bowl after bowl. Very retro-reminds me of the old  beef mac &  tomato casseroles of  the sixties and seventies.

It’s a pretty basic soup but very tasty.  I could eat this one  time  and again.

Ingredients

  • 1 pound lean ground beef
  • 1 large onion diced
  • 1 bell pepper diced
  • 2 teaspoons minced garlic
  • 6 cups beef broth
  • 14.5 ounce can diced tomatoes
  • 28 ounce can crushed tomatoes
  • 1 tablespoon Worcestershire sauce
  • 1 teaspoon Louisiana hot sauce
  • 1 teaspoon dried thyme
  • 1 teaspoon dried marjoram
  • 2 teaspoons dried parsley
  • 2 teaspoons salt
  • 2 teaspoons black pepper
  • 2 cups uncooked macaroni pasta

Instructions

  • Brown beef with onion, pepper and garlic and drain any excess fat.
  • Add remaining ingredients except pasta and bring to a boil.
  • Add pasta and simmer for ten minutes.
  • Serve hot.
