Garlic and Cheese Soup (Anti-Vampire Potion) is my recipe of the day with the blogging group Soup Swappers. We get together once per month to share our favorite and best soup recipes.
This month, of course, we are sharing recipes that are perfect for Halloween.
Of course, the perfect recipe in my mind is one that dispels vampires. As I curl up with my movie night with all the favorites: Dracula, Le ‘Estat, Barnabas Collins, Blade, Edward Cullen, Eric Northman and more, I really am going to need a ton of garlic to keep them from biting me where the sun don’t shine, IYKWIM.
And since garlic is the best kept secret for holding them off until they disappear into their unearthly coffins, this garlic cheese soup does just the trick.
The roasted garlic is mildly flavored, so as not to overpower you, and just enough to go with the cheese. Which is blended with both white and sharp cheddar, but you can use whichever you prefer. Just make sure to stir it in off the heat so the proteins don’t separate out and make it stringy (excess heat does that).

Garlic and Cheese Soup
Ingredients
- 1 cup diced celery
- 1 cup chopped onion
- 1 teaspoon minced garlic
- 4 tablespoons butter
- 2 teaspoons salt
- 1 teaspoon white pepper
- 1 teaspoon dried thyme
- 1/4 cup all-purpose flour
- 1 cup chicken broth
- 2-1/2 cups milk
- 8 ounces shredded cheddar cheese
- 1 cup roasted garlic cloves
Instructions
- Saute the onion and celery with the minced garlic in butter until the onion and celery soften.
- Stir in the flour to coat the vegetables along with the salt, pepper and thyme.
- Add the chicken broth, milk and roasted garlic clove and bring to a boil, stirring.
- Boil one minute to thicken, and remove from heat.
- Stir in the cheese and continue stirring until it melts.

I try to keep a clean mouth here, even if I drop the bomb five times a day on Facebook. LOL! But one day my potty mouth will be a skeleton out of the closet as I will be found out. Then there won’t be any pretense to aw-shucking the corn and stirring the fudge. Ha!
