Cold Soba Noodles is my recipe of the day with the blogging group Supper Club Saturday. We post together on the first Saturday of the month some of our favorite recipes which haven’t been published yet.
And I am sharing my recipe for a chilled soba salad. Of course, this is one I like for a light lunch. But it also makes a wonderful side dish. You might like yakitori kebabs with chicken. Or perhaps a nice teriyaki salmon.
I might even set out a bowl at a summer barbecue.

Cold Soba Noodles
Ingredients
- 7 ounces uncooked soba noodles
- 1/2 red bell pepper thinly sliced
- 2 green onions shredded
- 1/2 cup shredded carrots
- 1/2 cup hibachi dipping sauce from my hibachi chicken
- 1 tablespoon chopped cilantro or parsley
- 1 tablespoon black sesame seeds
Instructions
- Cook soba noodles according to package directions, then rinse and drain.
- Toss noodles with remaining ingredients and chill.
