Double Butter Crumb Cake is my recipe of the day for a blogging event celebrating National Coffee Cake Day. Ten bloggers have grouped together to share their sweet treats. And I am one of them.

I went about combining aspects of a streusel coffee kuchen I had posted before. And then I threw in a double batch of my yellow crumb topping. Y0u may have seen that on my Cinnamon Roll Pizza. That crumb is one I am pretty sure is commonly used in industrial bakeries. And it’s something you might see as yellow streusel on store bought baked goods.
As well, commercial bakeries are likely to use large boxed cake mixes. As their base. Certainly not artisan bakeries. But ones who do high volume.
The idea behind all the crumb was to keep it like a crumb cake, sort of New York style.
The funny part is that like the double butter coffee cake, the cake itself took a hard left turn and left me worrying if it would work out. It gets quite a bumpy top.
I had to wait until it cooled down to see for myself. And guess what? Yum.
It’s actually marvelous and the best coffee cake I have put together yet. We can debate f it tops crumb cakes and double butters in their fame, but it is certainly up there. Those who enjoyed had many kind words and superlatives. It was almost embarrassing. Still, definitely a keeper. Make sure you pin it so you don’t lose it!

Double Butter Crumb Cake
Equipment
- 1 oblong metal cake pan (9x13 inch)
Ingredients
Cake layer:
- 15.25 ounce box butter cake mix
- 2 large eggs
- 1 egg white
- 1/2 cup melted unsalted butter
- 3/4 cup buttermilk
- 1 teaspoon vanilla
Cream Cheese Filling:
- 8 ounces cream cheese at room temperature
- 1 egg yolk
- 1/2 cup light brown sugar
- 1 teaspoon cinnamon
- 1 teaspoon vanilla
Crumb Topping:
- 15.25 ounce box butter cake mix
- 9 ounce box Jiffy yellow cake mix
- 1 cup unsalted butter at room temperature
Sprinkle:
- 1/2 cup sifted powdered sugar
Instructions
- Preheat oven to 375F.
- Spray an oblong 9x13-inch metal cake pan with baker's release spray.
- Mix together cake batter until smooth. (Do not use any additional ingredients listed on the box- just the ones in this ingredient list).
- Spread batter into cake pan.
- Whisk the cream cheese filling until smooth, then put dollops across cake batter and gently spread it out as even as you can.
- Combine the large and small boxes of cake mix into a bowl and work in the soft butter until the mix is crumbly.
- Spread the crumb mixture over the cream cheese filling, trying to cover it all.
- Bake the cake for 40-45 minutes or until set. The cake might look like a mutant but it will be fine.
- Cool in the pan completely before sprinkling the powdered sugar over the top.
- Cut into15 pieces (3x5) being careful with some spots so the crumb bits don't mess u the slices.
- Store in an airtight container so it doesn't dry out.

It looks like it won’t make it as it bakes- like a lumpy mutant. I was very worried, but then? I ended up very happy with it. It’s like the story behind the double butter (which was a happy accident). I expect it will be the foundation of some future bakes as well.
