Strawberry Spinach Salad is my recipe of the day with the blogging group Improv Cooking. Each month we make new recipes for our blogs that include two select ingredients or themes. This month we are sharing red and green recipes.

For my offering, I chose a strawberry spinach salad, which is festively red and green.

I often do these salads in May and June when berries are local. But if I can get decent berries, I am not apt to wait a whole year for the season to come around again.

I do like buying fresh and local, but also enjoy certain other fruits as they are shipped. And soon, Florida will be knee deep in strawberries. So I look forward to having this again several times.

Ingredients

Salad Ingredients

  • 5 ounces baby spinach leaves torn
  • 1 pound fresh strawberries hulled and quartered
  • 1/2 cup toasted almonds
  • 4 ounces soft goat cheese crumbled
  • 2 scallions

Dressing Ingredients

  • 1/2 cup honey
  • 2 tablespoons strawberry vinegar
  • 2 tablespoons white balsamic vinegar
  • 1-1/2 teaspoons poppy seeds

Instructions

  • Whisk together dressing and toss half the dressing with spinach leaves to coat.
  • Arrange in salad bowls topped with the other ingredients, and drizzle remaining dressing over the top.
