Strawberry Basil  Avocado Toast is my recipe of the day with the blogging group  Improv Cooking Challenge. We get together once per month to blog recipes we create using the two special ingredients of the month.

The ingredients for June are strawberries and basil!

A  favorite fruit of the season

Strawberries  in  Ohio are not that abundant this year as we were hit by a late frost. Many growers were hit hard. I have a small patch and they came through the weather okay but still were not very abundant.

So I have been relying on market berries when I can.

I also grow a lot of herbs- and for basil I love to have a couple types. This year I am growing Thai basil and another that is a compact Greek basil with a shorter bushier  plant and smaller leaves. We’ll see how that Greek one does as I haven’t had it before.

Avocado for breakfast

Avocado toast is a favorite  of mine for breakfast, as I am sure it is with many people. Often I like it with bacon and maple syrup, but once in  awhile  something different is preferred.

Strawberries and basil  make a wonderful  topper  for the avocado. I know many  of you wonder why avo needs a topper at all, but like I said. It’s something  different.

This one  is really tasty and  I think you’ll  like it.

Balsamic reduction

I used a balsamic reduction as a  sprinkle. This is thicker and more concentrated than balsamic vinegar so don’t confuse  it. You can make your own by means of a reduction in  volume until syrupy  over low heat.

Considering that summer heat is already building you might want to forego  the extra kitchen time to make that so I will offer that Alessi makes a bottled reduction which is okay. Not as good as  some but  it is  what it is.

Just as with anything, they probably don’t use the top shelf balsamic in theirs. And if  making your own try not to use the cheapest balsamic on the shelf.  This still lasts a little  while  anyway so splurge at least a  little bit on a better vinegar if you can.

Some vendors will have  tastings if  you don’t  already have a favorite brand.

  1. I usually top my avocado toast with a slice of tomato and squeeze of lime juice, but I’m intrigued by your strawberry-basil version. Earmarking this one to try soon.
