Blackberry and Apple Slaw is my recipe of the day with the blogging group Sunday Funday. We post weekly on varying topics. This week we’re featuring blackberries. Glad you could join us!

This is the time of year when the local blackberries are available at our favorite farmer’s markets. And even though blackberries can be had pretty much year-round these days (thanks to global growers), the best ones are still local. Picked fresh and taken to market that day.

So it’s the perfect time for blackberry recipes. And as I’ve done a variety of blackberry desserts before, I chose to make a cabbage-based slaw instead. With some nice, crisp apples, and finished with blackberries.

I wanted to punch up the blackberry flavor, so added some seedless blackberry jam to my vinaigrette. It also gave the apples a nice little blush.

A sprinkle of chopped, toasted pecans gives it added crunch and flavor. Just remember to add the berries and nuts when you serve the slaw. That way things don’t get bruised and soggy.

Ingredients
  

Slaw:

  • 1 pound red cabbage shredded
  • 1 pound green cabbage shredded
  • 1 cup diced celery
  • 1 cup chopped toasted pecans
  • 4 green onions chopped
  • 3 crisp Envy apples cored and diced
  • 12 ounces fresh blackberries

Blackberry Vinaigrette:

  • 3/4 cup fresh lemon juice
  • 1/2 cup blackberry jam melted in microwave
  • 1/3 cup salad oil
  • 1 teaspoon celery seed
  • 1/2 teaspoon dry mustard
  • 1 tablespoon dried chives
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper

Instructions
 

  • Dice apples and place in lemon juice while you prep the rest of the slaw.
  • Then drain the lemon juice in a shaker for the vinaigrette and add the apples to the slaw mixture (except blackberries and pecans).
  • Whisk vinaigrette and toss with slaw, and refrigerate for about an hour.
  • Garnish with the pecans and blackberries just before serving to prevent bruising and crushing.

    Really nice change of pace from the usual slaw. Blackberries are a favorite and they pair perfectly with the other ingredients.
