Dolly Parton’s Coleslaw is my recipe of the day for the blogging event Farmers’ Market Week. We do an event annually during the summer to share our love and excitement for locally sourced produce. Glad you could join us!

Dolly Parton's Coleslaw

For my final post as part of Farmers’ Market Week I’m sharing Dolly Parton’s delicious coleslaw recipe.

This is chock-full of goodness from local farms – cabbage, carrots, onion and bell pepper. There’s no cooking involved, either. All of the work is in the prep. The rest is mixing up the dressing and tossing with the veggies. Then chill until serving.

You can serve this with a variety of main dishes as a salad. In particular, anything country, homestyle or Southern goes especially well with it.

Equipment

  • 1 mixing bowl

Ingredients
  

Slaw:

  • 1 medium head cabbage chopped
  • 1 medium onion finely chopped
  • 1 carrot grated
  • 1/2 green bell pepper finely chopped

Dressing:

  • 2 teaspoons granulated sugar
  • 1/4 teaspoon black pepper
  • 1 teaspoon salt
  • 1/4 cup sweet pickle juice brine
  • 1/4 cup white vinegar
  • 1 dill pickle chopped
  • 1 cup Duke's mayonnaise

Instructions
 

  • Whisk together dressing in a salad bowl and toss with slaw.
  • Refrigerate one or more hours or until serving.
