White Chocolate Biscuit Gravy
My recipe of the day is for white chocolate biscuit gravy, which is a riff off the more typical southern style chocolate gravy. It was created using the Rosemary and Sea Salt in White Chocolate bars from Forte Chocolates, one of the sponsors of Choctoberfest.
The flavor is creamy and lightly sweet, and the rosemary and sea salt set it over the top without being cloyingly sweet or gross, if you might wonder. The white chocolate accentuates the gravy without taking it over completely. Much in the same way you might have chocolate pancakes without it seeming as sweet as chocolate cake.
It is the perfect cross between sweet and savory for any kind of breakfast.
I do love the rosemary in this- I happened to get the bars by accident instead of ones I had asked for. But it turns out to be a stroke of good luck because instead of making Mexican mole with a spicy chocolate, I turned to this instead, and believe me, it was a real treat.

White Chocolate Biscuit Gravy
Yield: 2 cups gravy, 1/2 cup per serving
Ingredients:
- 1/4 cup unsalted butter
- 1/4 cup all-purpose flour
- 1 pint whole milk
- 2 (45 grams each) bars Forte/Gusto Rosemary and Sea Salt in White Chocolate, chopped
- 4 prepared biscuits (to serve gravy on)
Method:
- Melt butter in a nonstick skillet and whisk in the flour.
- Cook for one minute.
- Stir in the milk and whisk the roux into it, heating and stirring until mixture becomes slightly thick.
- Add the chopped white chocolate and continue to stir to melt and finalize the thickening on the gravy.
- Serve gravy over biscuits.
