Salads for brunch are very easy with ham, egg and cheese topped with a creamy homemade Thousand Island dressing.
Ham and Egg Salad

My recipe of the day is for Ham and Egg Salad with a sprinkling of goat cheese and something like shelled edamame, peas or butter beans, topped with my homemade Thousand Island dressing (click the separate link for that recipe).

The Perfect Brunch Salad
This particular salad I love having as a brunch salad if I am leaning slightly toward luncheon items, such as quiche or savory crepes. The combination of ham, eggs, and goat cheese go well even with something like an omelet.
So if you are wondering what kind of salad to make on weekend mornings, this could be the salad for you. Of course it is fairly simple, and also uses my Thousand Island recipe made from scratch. I like making my own dressings and this one I am pretty particular about since I am picky with this type of dressing. Hopefully it pleases you as well.
I’ve also included some links for other salads I like using my homemade dressings. They are easy enough to make and keep in the fridge in a small canning jar.

Ham and Egg Salad
Ingredients
- 4 cups torn lettuce or frisee
- 2 hard cooked eggs peeled and halved
- 4 ounces julienned smoked ham browned
- 1/2 cup cooked peas soybeans or butter beans
- 1-2 ounces goat cheese crumbles
- 1/4 cup Thousand Island dressing
Instructions
- Arrange salad on plates and top with Thousand Island dressing.
Makes a complete protein pack meal.
I love the “breakfast salad” idea, super yummy salad toppings.
This salad is straight out of my childhood, especially with that 1000 Island Dressing!!! YUM!
