Pumpkin Pie Baked Oatmeal Cups

My recipe of the day is for Pumpkin Pie Baked Oatmeal Cups, a breakfast treat made with oatmeal, pumpkin and spices. It is part of #PumpkinWeek, which is a sponsored blogger event with lots of fun, recipes, and a giveaway, of which today is the final day. So don’t forget to get your entries in!
I’ve been trying to share a variety of things this week, from breakfast to dinner to dessert. My quiche was another one I made for breakfast, but I will eat quiche any time of day and don’t reserve it for the morning.
The baked oatmeal cups are pretty much for breakfast, but not exclusively. I would also eat these as a dessert. And while not a classic dessert, when topped with fruit, nuts, the pumpkin pie sauce from Torani and some whipped cream, it is pretty awesome. So yeah, I would do that.
I put one oatmeal cup in the dish, but you could have 2-3 depending on your breakfast appetite or if you are also having something else with it. If I were serving this for a breakfast among family, I might cook up some sausages and also have a bowl of fresh fruit to go with.
For this recipe I utilized Dixie Crystals brown sugar, Torani Puremade Butterscotch syrup, and Torani Puremade Pumpkin Pie Syrup.

Dixie Crystals normally provides lots of all kinds of sugar but for this round of Pumpkin Week opted to send me provisions from Amazon, of which I chose a selection of vanillas, still having some of their wonderful product on hand to use as well.
And their sugars are fantastic- they have lots of granulated, confectioners and brown sugars for any kind of baking you can imagine.
Torani provided a couple of their Puremade products: Butterscotch syrup as well as the caramel syrup, both of which were used in this recipe.
Pumpkin Pie Baked Oatmeal Cups
Baked Muffin Cup Batter:
- 3 cups old-fashioned oats
- 2 large eggs lightly beaten
- 1/4 cup Dixie Crystals light brown sugar
- 3/4 cup canned pumpkin
- 3/4 cup milk
- 4 tablespoons Torani Butterscotch puremade syrup
- 3 tablespoons melted butter
- 1 teaspoon baking powder
- 1 teaspoon cinnamon
- 1/2 teaspoon ground cloves
- 1/2 teaspoon ground ginger
- 1/8 teaspoon grated nutmeg
- 1/2 teaspoon vanilla extract
- Torani pumpkin pie puremade sauce
- dried sweetened cranberries
- chopped candied pecans
- whipped cream
- Preheat oven to 350F.
- Spray a 12-cup muffin tin liberally with nonstick spray.
- Combine ingredients for muffin cups in a bowl and stir.
- Divide batter evenly in the muffin tin.
- Bake for 25-28 minutes or until firm and golden brown.
- Serve warm with optional garnishes and store leftovers refrigerated.
- Warm again in toaster oven or microwave before serving.
