Something Different

I’ve been  trying to share  a variety of things this week, from breakfast to dinner to dessert. My quiche was another one I made for breakfast, but I will eat quiche any time of day and don’t reserve it for the morning.

The baked oatmeal cups are pretty much for breakfast, but not exclusively.  I would also eat these as a dessert. And while  not a classic dessert, when topped with fruit, nuts, the pumpkin pie sauce from Torani and some whipped cream, it is pretty awesome. So yeah,  I would do that.

I put one oatmeal cup in the dish, but you could have 2-3 depending on your breakfast appetite or if you are also having  something else with it. If I were serving this for a breakfast among family,  I might cook up some sausages and also  have a bowl  of fresh fruit to go with.

For this recipe I utilized Dixie Crystals brown sugar, Torani Puremade Butterscotch syrup, and Torani Puremade Pumpkin Pie Syrup.

Ingredients
  

Baked Muffin Cup Batter:

  • 3 cups old-fashioned oats
  • 2 large eggs lightly beaten
  • 1/4 cup Dixie Crystals light brown sugar
  • 3/4 cup canned pumpkin
  • 3/4 cup milk
  • 4 tablespoons Torani Butterscotch puremade syrup
  • 3 tablespoons melted butter
  • 1 teaspoon baking powder
  • 1 teaspoon cinnamon
  • 1/2 teaspoon ground cloves
  • 1/2 teaspoon ground ginger
  • 1/8 teaspoon grated nutmeg
  • 1/2 teaspoon vanilla extract

Optional Garnishes:

  • Torani pumpkin pie puremade sauce
  • dried sweetened cranberries
  • chopped candied pecans
  • whipped cream

Instructions
 

  • Preheat oven to 350F.
  • Spray a 12-cup muffin tin liberally with nonstick spray.
  • Combine ingredients for muffin cups in a bowl and stir.
  • Divide batter evenly in the muffin tin.
  • Bake for 25-28 minutes or until firm and golden brown.
  • Serve warm with optional garnishes and store leftovers refrigerated.
  • Warm again in toaster oven or microwave before serving.
