Grilled Chicken Salad with Balsamic Vinaigrette is my recipe of the day.  I am glad you could join me! This was  scheduled  to be shared  some weeks ago with the  blogging group Sunday  Funday.

Unfortunately, when  I was typing  up the post I  realized I forgot  to write  down how much  oil to  put. So I had  to wait  for a  chance  to  use  up  the  rest  and  mix  up another batch  to make  sure  the ingredients were  right. Even though for myself,  and can measure  most  things  by  eyeballing it, I am  not doing that  when  it comes to the blog. I will measure what I  do  for  you every single  time.

Anyhoo,  a reader had also been asking me if I  had a recipe for balsamic  dressing. Which  made me realize  I hadn’t put  one up yet. I thought I  pretty  much  had  all  the salad  dressings  posted,  but I guess  I missed some.

If you ever  notice there  is  one you are looking for but can’t find, drop me a line. I’ll see  if I can get that recipe up for you quickly.

Also, you can  use this recipe for other  things  than I have  show  here. Any type salad will  work (within reason). And it does  make an  excellent  marinade with or without salad.

Ingredients
  

Dressing:

  • 1/2 cup aged balsamic vinegar
  • 1/2 cup apple cider vinegar
  • 1/2 cup extra virgin olive oil
  • 1/2 teaspoon garlic powder
  • 2 teaspoons onion powder
  • 1 teaspoon dry mustard
  • 1/2 teaspoon black pepper
  • 1 teaspoon salt
  • 4 tablespoons honey

Instructions
 

  • Whisk together thoroughly and store in a pint jar, refrigerated. Serve on salad with your choice of ingredients.

Notes

From the kitchen of palatablepastime.com. Makes 1-2/3 cup (pint jar). To make chicken, marinate a pound of chicken breast in 2/3 cup dressing overnight. Remove chicken from marinade and grill until 165F.
