Barley Salad with Apple and Cranberry is my recipe of the day with the blogging group Foodie Extravaganza. We post monthly on changing theme topics. This month we are posting recipes that include honey. Glad you could join us!

Barley Salad with Apple and Cranberry mixes healthy grains with fruit and nuts in a delicious fall salad with honey vinaigrette.

It was my  turn  to “host” for the month. So that  meant I  got to  choose the theme. Since  September celebrates Rosh  Hashanah, I decided on  honey as an  ingredient.

I went  for a  salad  that was  inspired by  autumn. For me,  that meant,  whole grains, fruits and  nuts. And  of  course a siple  homemade  vinaigrette  made with  honey.

The salad is  very  filling  but  still  great  alongside a  half sandwich  or perhaps a bowl  of  French  onion  soup. Whatever you decide  to have  with  it,  I hope  you enjoy.

Ingredients
  

  • 1 cup quick cooking barley
  • 2 tablespoons lemon juice
  • 1 medium gala apple cored and chopped
  • 1/2 cup craisins
  • 1 scallion thinly sliced
  • 1 cup chopped toasted pecans
  • 1/4 cup honey
  • 1 tablespoon red wine vinegar
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1 tablespoon chopped Italian parsley
  • 1/4 cup extra-virgin olive oil

Instructions
 

  • Cook barley according to package directions, then drain, rinse and cool.
  • Soak chopped apples in lemon juice while preparing the rest of the salad.
  • Combine all salad ingredients and stir.
  • Chill until serving time.
