Peanut Noodles with Chicken is my recipe of the day with the blogging group From Our Dinner Table. We group weekly to post new recipes on a variety of common topics. This week we’re featuring peanut butter recipes. Glad you could join us!

My offering is for a take on sesame noodles that uses both peanuts and peanut butter. This should satisfy the cravings of any peanut butter fan.
With that, I add in various aromatics, spice and a little bit of chicken. This makes it perfect for lunch.
The flat rice noodles are soaked rather than cooked. This is achieved by pouring boiling water over them. Then you wait for those to cool. Test a noodle and it should be done to your liking. If it is too toothsome, repeat the procedure with more boiling water.
This should help avoid the problems one can get that cause the noodles to be mushy and overcooked by adding them to a skillet or wok.

Peanut Noodles with Chicken
Ingredients
- 4 ounces flat rice noodles uncooked
- 4-6 cups boiling water
- 1 tablespoon toasted sesame seeds
- 1 tablespoon dark soy sauce
- 2 tablespoons Trader Joe's chili crunch or other chili paste
- 1 tablespoon hoisin sauce
- 2 tablespoons creamy peanut butter
- 1 tablespoon fish sauce
- 1 teaspoon grated fresh ginger
- 2 teaspoons granulated sugar
- 1/4 cup hot water
- 1/4 cup fresh basil thinly sliced
- 2 scallions thinly sliced
- 2 tablespoons chopped cilantro
- 1/4 cup roasted peanuts
- 4 ounces roasted chicken chopped
Instructions
- Place uncooked noodles in a bowl, breaking them in half for easier handling later.
- Cover with boiling water.
- Allow to rest until water cools down. Test a noodle to see if it is tender enough. If not, drain and add boiling water again, resting until noodles are done to your liking, then drain.
- Whisk together the sesame seeds, dark soy sauce, chili crunch, hoisin sauce, peanut butter, fish sauce, ginger sugar and hot water until smooth.
- Toss sauce with noodles.
- Mix in the basil, scallions, cilantro, peanuts and chicken.
