Onion Pie is my recipe of the day. I was asked about an onion pie and I do have a recipe available for Alsatian Quiche which is like a quiche Lorraine except it is very Parmesan forward instead of the usual Swiss cheese or Gruyere.

The pie I am sharing today is probably somewhere in between an onion tart and a quiche. I left the onion thicker and used milder red onion exposed on top for more visual appeal. Rather than chopping it up and submerging the onion under custard.

This pie turned out very tasty. It is something I might like for brunch or lunch along with a light salad made with baby greens. I hope you enjoy as well. Let me know how you like it in the comments and don’t forget to grade it with a star.

Equipment

  • 1 eight-inch tart pan

Ingredients
  

  • 1 single pie crust
  • 6 ounces shredded gruyere
  • 3 large eggs
  • 3/4 cup heavy cream
  • 1/4 cup sour cream
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp minced garlic
  • 12 ounces thickly sliced red onion
  • 1 tbsp soft butter chopped
  • 1/8 tsp grated nutmeg

Instructions
 

  • Preheat oven to 375F.
  • Fit pie crust into tart pan and flute edges.
  • Whisk together the eggs, heavy cream, sour cream, salt, black pepper and garlic in a small bowl; set aside.
  • Heat a griddle or frying pan with nonstick spray.
  • Place onions on griddle and cook until they soften, turning once to cook both sides.
  • Place shredded cheese on the bottom of the crust and top with egg mixture.
  • Place onions on top of custard; dot with butter and sprinkle with nutmeg.
  • Place pan on a cookie sheet to catch spills and bake for one hour, or until the center is domed and cooked through.
  • Cool 15 minutes before cutting into slices.
