Olive Cream Cheese Bites is my recipe of the day with the blogging group Alphabet Recipe Challenge. We group together twice a month to cover recipes for each corresponding letter. This week we are on the letter “O”. Glad you could join us!

For my letter “O” recipe I went with olives. I decided to make some bite-sized appetizers using pimento-stuffed green olives. Something tasty yet easy that didn’t require using the stove. Perfect for summer, right?
But first, I gave them a nice little soak in some vodka. Make sure they felt happy-happy, as Emeril likes to say.
After an overnight marinate, I coated the olives with a mixture of cream cheese, crumbled bacon and garlic powder. Then they went off to the fridge to set up, before rolling in crushed walnuts.
The result is a delicious bite of crunchy, creamy, briny goodness. They’re perfect for adult entertaining.

Olive Cream Cheese Bites
Equipment
- refrigerator
Ingredients
Olives and Marinade:
- 15 pimiento stuffed olives
- 2 tablespoons vodka
- 1 tablespoon olive oil
- 1 tablespoon olive brine
Cheese and Nuts:
- 8 ounces cream cheese at room temperature
- 1/4 teaspoon salt
- 1/4 cup crumbled cooked bacon
- 1/4 teaspoon garlic powder
- 1/2 cup finely chopped toasted walnuts
Instructions
- Marinate olives in vodka, olive oil and brine overnight.
- Combine cream cheese with salt, bacon and garlic powder.
- Drain olives and pat dry.
- Coat with cream cheese and chill until firm (about 3 hours).
- Remove from fridge and roll balls in finely chopped walnuts.

I usually go for the Castelvetrano olives, but those stuffed greens look really tasty and the whole bite sounds utterly amazing.
