Spanish Stuffed Eggs with Shrimp is my recipe of the day with the blogging group Eat the World. The group meets monthly to post a recipe from the country of the month. This month we are featuring the recipes of Spain. Glad you could join us!

For my recipe contribution, I decided to make stuffed eggs topped with shrimp and the flavors of Gambas al Ajillo. This involves seasoning with garlic, butter, paprika, and adding shrimp. From “gambas”, meaning prawns, and “ajillo”, meaning garlic.
Big prawns aren’t going to easily fit on the eggs, obviously. But you can use shrimp. keeping the size just small enough to fit. And then placing the shrimp so the top end is on the bigger portion of egg white.
You can use raw shrimp if you like, sauteeing those in garlic butter first. I used cooked shrimp for ease of prep. Both types of shrimp will be flavorful.
The paprika butter drizzled on at the end adds both a punch of flavor and color. These are perfect served with wine or beer. Whatever you have for serving with tapas.

Spanish Stuffed Eggs with Shrimp
Ingredients
Eggs and Filling:
- 6 eggs hard-cooked and peeled
- 12 large cooked shrimp peeled and deveined
- 2 tablespoons mayonnaise
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
- 1/4 teaspoon smoked paprika
- 1/4 teaspoon garlic powder
- 1/4 teaspoon anchovy paste
Drizzle:
- 2 tablespoons melted butter
- 1/4 teaspoon smoked paprika
Instructions
- Cook eggs and cool using your preferred method.
- Peel, cut in half, and place yolks in a bowl.
- Mash yolks with mayonnaise, salt, pepper, paprika, garlic and anchovy.
- Fill egg cavities with yolk mixture.
- Top each egg half with a cooked shrimp.
- Melt butter and stir in paprika.
- Drizzle seasoned butter over eggs. Add a little extra sprinkle of paprika if desired.
